Learning Labrador: Memorial’s land‑based course ends with a student cook‑off celebrating local knowledge

Source publication : 2026-11-05 · Memorial University

Memorial University’s Learning Labrador course (Arctic and Subarctic Futures) wrapped its term with a cook‑off where students created a menu rooted in Labrador’s foods and traditions. Taught at the Labrador Campus by Dr. Damian Castro, the course emphasizes land‑based learning, community partnerships and sustainable food practices.

Offered through the Arctic and Subarctic Futures graduate program at Memorial University’s Labrador Campus, Learning Labrador centers on land‑based learning: community visits, meetings with local knowledge holders and field projects. The 2026 session concluded with a signature cook‑off in which students transformed course learning into dishes sourced through local harvesters. Sarah Frey and Maggie Webb won with a menu highlighting nose‑to‑tail practices and locally procured ingredients. The course fosters sustained connections among students, communities and place while demonstrating experiential pedagogy grounded in reciprocity and sustainability.
