Química del vino (también ofrecido como OEVI 3P25 ) Azúcares, ácidos, compuestos nitrogenados en el jugo de uva; actividad antimicrobiana y antioxidante del dióxido de azufre; ajustes del mosto; bioquímica de la fermentación alcohólica y malo-láctica; estabilidad del bitartrato y de las proteínas; agentes clarificantes; envejecimiento del vino y oxidación fenólica. Conferencias, laboratorio, 6 horas por semana. Restricción: abierto a majors BCHM, BIOL (simple o combinado), BTEC , OEVI y a estudiantes del certificado OEVI o con permiso del instructor. Prerrequisito(s): BIOL 2P02 , 2P03 (2F01), CHEM 2P20 y 2P42 . Nota: se requiere una cuota por materiales. Los estudiantes deben tener al menos 18 años de edad. Se recomienda encarecidamente que los estudiantes cursen BCHM 3P01 antes o simultáneamente con OEVI (BCHM) 3P25 . Este curso puede ofrecerse en múltiples modos de impartición.
