Química del vino (también ofrecido como BCHM 3P25 ) Azúcares, ácidos, compuestos nitrogenados en el mosto; actividad antimicrobiana y antioxidante del dióxido de azufre; ajustes del mosto; bioquímica de la fermentación alcohólica y maloláctica; estabilidad bitatrato y de proteínas; agentes clarificantes; envejecimiento del vino y oxidación fenólica. Conferencias, laboratorio, 6 horas por semana. Restricción: abierto a OEVI, BCHM , BIOL (simple o combinado), BIOL (Honores)/BEd (Intermedio/Senior), BTEC especialidades y a estudiantes del certificado OEVI o con permiso del instructor. Prerrequisito(s): BIOL 2P02 , 2P03 (2F01), CHEM 2P20 y 2P42 . Nota: se requiere cuota por materiales. Los estudiantes deben tener al menos 18 años de edad. Se recomienda encarecidamente que los estudiantes tomen BCHM 3P01 antes o concurrente con OEVI 3P25. Este curso puede impartirse en múltiples modalidades de enseñanza. El método de impartición aparecerá en el horario académico, en el periodo correspondiente. *
